What’s with the beets
Because of their sweetness, smooth texture and nutrients, root vegetables make baking always a little better. Although using vegetables in desserts is not a new thing, there are plenty of variations of recipes out there that embrace plants in an imaginative, unique way. My method is not one of those trendy grazes; it’s just another brownie recipe. A good solid classic that is light but an undoubtedly sultry version. It is more cheeky than fudge. If you like it sticky, this will delight your taste buds.
There are many reasons why I love this recipe. Firstly, the sweetness of beets combined with the apple purée will guarantee you a pleasant, rich brownie and secondly, the way the intense purple hue will deepen the color of cocoa. Furthermore, beet, as well as apple, works as a fantastic binder as well as an egg substitute. Who would have thought of that? In case you are wondering, the lovely earthy flavor of fresh beets is not recognizable after baking. Only yummy traits remain.
How to make these sultry squares
In case you don’t have any whole cooked beets or purée at hand, the first step is to prepare them. I did not include this in the recipe because the cooking time varies a lot depending on the size and the age of the beets available to you. It takes somewhere between 20 to 45 minutes for the beetroot to soften. When cooked, set beets to cool in ice-cold water and peel with your hands or a knife. The cold water helps the peel to slip right off.
Next prepare cold, cooked and peeled beetroot in chunks in a blender with two tablespoons of water to make the purée smooth. Then pre-heat your oven to 200° Celcius and line a 26-centimeter in diameter baking pan with parchment paper. This step will make it easy for you to lift the brownie sheet off from the tray after baking, even if it’s a deeper pan you are using.
The brownie mix
Start making the brownie mix by adding dry ingredients flour, sugar, cocoa powder, baking powder, and salt into a large bowl and mix well to combine. Next, add the puréed beets, apple sauce, avocado oil, almond milk, and apple cider vinegar to the bowl and stir well with a whisk until uniform.
Pour the batter into a pan lined with parchment paper and transfer it to a hot oven for about 15 minutes. Check the right consistency by inserting a toothpick into the brownie. If it comes out almost clean, then the brownie is ready. You want to leave the brownie a little uncooked from the inside to get that nice moist, sticky feel.
If you want your brownies to be more cake-like, bake it for a few minutes longer. Allow the brownies to rest for a good while before setting it on a wire rack or a cutting board to cool completely. Cut into squares and dust with powdered sugar before serving with some organic dark chocolate chunks and vibrant fresh strawberries!
Serving suggestion
I have made these brownies to treat myself, but let’s face it, what wouldn’t we do to make our special someones extremely happy? I served these brownies solely with some powdered sugar and fresh strawberries, and it was delightful and visually captivating. But if you like to play with higher bets, I suggest you try out this version.
Cut the brownie sheet in two layers. Next, create a base for this dreamlike dessert and spread your favorite nut butter generously on top of the brownie. Then sprinkle it thoroughly with crunchy caramel crumbs and chocolate shavings. To boost the flavors of beets and nuts add a moderate amount of sea salt. That sounds enticing. What should we add to this seductive dessert? Oh, now I know. Let’s use dark red cherries, the speaking image of seduction. Let me know how you like the irresistible beetroot brownie, and what heavenly desserts you create with it!

Notes
- The cooking time for the beets varies a lot depending on the size and the age of the beets available to you. It takes somewhere between 20 to 45 minutes for beetroots to soften. When cooked, set beets to cool in ice-cold water and peel with your hands or a knife after. The cold water helps with the peel to slip right off. I tend to peel beets in the sink, just in case of a slip.
